Clementine roasted rainbow carrots

Want to eat something healthy, festive and still kind of christmaslike? These beautiful rainbow carrots are perfect to make a good side dish.  I think they look so nice and tasty with all their beautiful colors. I decided to roast them in a
marinade with clementine and sesameseeds. I have tried roasted carrots with a glaze before and always think it tastes very good! It’s just a little bit different then your regular cooked ones, with a few subtle extra flavours. It is a perfect side dish for your everyday meal.

You’ll need:

  • Rainbow carrotsdsc_1007
  • 2 tablespoons of olive oil
  • About 1 tablespoon of soy sauce
  • Juice of 1 clementine
  • about 1 tablespoon of sesameseeds
  • Some pepper


Peel and cut the carrots and make them about the same size. I didn’t do it and that’s why I had to pick my carrots out of the oven one by one because the small ones are ready much sooner then the big ones. You then put together the ingredients for the glaze and cover the carrots with this. Now you can roast the carrots on 180 degrees celcius for about 30 (small carrots) 40 (medium carrots) or 50 (large carrots) minutes. Serve with some chopped parsley.
